Recipe for Festive Broccoli Salad

The combination of green broccoli florets and red cherries makes this a lovely vegetarian dish. The blend of flavors is unique and delicious. You may as well double the recipe — this one doesn’t last. If you do happen to have leftovers, this salad tastes even better the second and third day after you prepare it.

Preparation time: 10 minutes

Yield: 8 servings

1 head broccoli, broken into florets (about 4 cups)

1 cup dried cherries

1 medium onion, chopped

1/2 cup salted sunflower seed kernels

1/2 cup reduced-fat or soy mayonnaise

2 tablespoons red wine vinegar

1/4 cup sugar

  1. Place the broccoli, dried cherries, onion, and sunflower seed kernels in a large mixing bowl.

  2. In a small bowl or cup, whisk together the mayonnaise, vinegar, and sugar to make the dressing and then pour it over the broccoli mixture.

  3. Toss all the ingredients together until the broccoli mixture is covered with dressing. Chill for at least 1 hour before serving, or overnight for best flavor.
