Tortoni Pie Recipe - dummies

A blend of cherries, chocolate, and rum gives this rich pie a festive appearance and flavor. This pie is an excellent choice to finish a vegetarian holiday meal or to celebrate any holiday.

Garnished with mint; note that your cherry juice swirls might not be as pretty as these, but they’ll taste just as great!

Preparation time: 25 minutes (including time for the ice cream to soften)

Cook time: 60 minutes

Yield: One 9-inch pie (8 slices)

1⁄2 gallon Rice Dream vanilla or other nondairy ice cream substitute

1⁄4 cup rum

1 tablespoon pure vanilla extract

1 small jar maraschino cherries, drained and chopped (reserve cherry juice)

1⁄4 cup cherry juice (from the jar of maraschino cherries)

6 ounces chocolate or carob chips

9-inch ready-made chocolate crumb crust

  1. Leave the ice cream out at room temperature until slightly softened, about 10 minutes.

  2. In a large mixing bowl, combine the ice cream, rum, vanilla, cherries, cherry juice, and chocolate chips. Stir with a large spoon until the ingredients are well blended and the mixture is smooth.

  3. Pour the ice cream mixture into the pie shell. Cover with foil and place in the freezer until hardened, about 1 hour.
