Rustic Apple Bread Pudding - dummies

The cubes of bread give this pudding a pleasing, lumpy-bumpy texture. The fragrance and flavor of cinnamon and apples make this apple bread pudding a comfort food that you can enjoy any time of day.

Preparation time: 15 minutes

Cooking time: 60 minutes

Yield: 6 servings

4 slices whole-grain bread

1/2 cup raisins or chopped dates

1 cup unsweetened applesauce

1/2 teaspoon ground cinnamon

1 teaspoon pure vanilla extract

1/3 cup packed light brown sugar

4 eggs

2 1/2 cups vanilla soymilk or skim milk

Confectioner’s sugar

  1. Preheat the oven to 350 degrees.

  2. Lightly oil an 8-x-8-x-2-inch baking pan.

  3. Cut the bread slices into 1-inch cubes.

  4. Spread the bread cubes evenly in the pan and sprinkle the raisins on top.

  5. Separate the eggs.

  6. In a blender or food processor, blend the applesauce, cinnamon, vanilla, brown sugar, egg whites, and soymilk thoroughly.

  7. Pour the mixture evenly over the bread cubes and raisins.

  8. Allow the pudding to set for 10 or 15 minutes before baking.

  9. Bake for about 60 minutes.

    You want the pudding to be set in the middle and lightly brown.

  10. Dust with a sprinkling of powdered sugar.

  11. Serve warm or chilled.
