How to Cook Breakfast for Any Time of Day as a Student

Let’s face it, getting up before midday might be a rare thing while you’re a student. Try cooking an all-day breakfast on toast or bagels for whatever time you get up, whether that’s a late afternoon lie-in, or a post-clubbing nosh-up for the times when you’re still up at 4 a.m.

Grilled Tomatoes on Toast

Everyone knows beans on toast, but what about a colourful alternative? Tomatoes are fantastic things, full of vitamin C and lycopene, a natural antioxidant that gives them their red look. So when choosing tomatoes, look out for really bright red ones, because these contain the most lycopene.

Cooking tomatoes releases even more of their nutrients and is as good, if not better, for you than eating them raw.

Preparation time: 3 minutes

Cooking time: 5 minutes

Serves: 1

3 small tomatoes, sliced in half

2 slices of wholemeal bread (or white bread if you prefer)

Low-fat spread

Salt and pepper

Brown sauce (optional)

  1. Turn on the grill.

  2. When the grill is hot, place the tomatoes under the grill. Grill for 5 to 7 minutes, until the tomatoes become soft and the tops turn a dark golden colour.

  3. Toast the bread and spread with low-fat spread. Add the grilled tomatoes.

  4. Add a shake of salt and pepper.

  5. Add a dash of brown sauce for a little kick.

Variation: Use cherry tomatoes for that extra sweetness, or if you have half a tin of chopped tomatoes that needs using up, fry them in a little olive oil and pour on the toast.

Wholemeal Bagels with Cottage Cheese and Grilled Tomatoes

Turn your kitchen into a New York deli with these delicious bagels. You can choose health-conscious wholemeal bagels or white bagels instead.

When you get home, split up the bread and freeze in freezer bags. Use slices or bagels as and when you need them, defrosting them the night before.

Serves: 4

4 tomatoes, cut into quarters

Salt and pepper

4 wholemeal bagels

300 grams cottage cheese

  1. Turn on the grill to a medium setting.

  2. When hot, place the tomatoes onto the grill tray, sprinkle a little salt and pepper over them and place under the grill for about 5 minutes.

  3. Cut the bagels in half and place in a toaster for about a minute (use your toaster’s bagel setting if it has one, to toast the flat side more than the curvy side).

  4. Spread the cottage cheese on each toasted bagel.

  5. When the tomatoes turn soft and golden brown, remove from the grill and carefully place onto the bottom half of each bagel. Place the other half of the bagel on top.

Variation: As an alternative to grilling the tomatoes, you can also cut them up smaller and fry them in a pan with a little olive oil.
