Flat-Belly Recipe: Spicy Coconut Soup

Balance this spicy coconut soup with protein by adding your favorite seafood. Shrimp or scallops would be delicious. Feeling fancy? Garnish this dish with sliced green onions and grated lime zest.

Yield: 2 servings

1 tablespoon coconut oil

1 tablespoon minced garlic

1 medium tomato, diced

1 medium onion, chopped

1 yellow bell pepper, sliced

2 tablespoons shredded coconut

1-1/2 cups ZICO Natural Pure Premium Coconut Water

1/4 to 1 teaspoon cayenne pepper, to taste

1 teaspoon curry powder

1 tablespoon ginger powder

Salt, to taste

Pepper, to taste

1 tablespoon lemon zest, for garnish

  1. In a large saucepan, add the coconut oil and garlic over medium heat. Add the tomato, onion, pepper, and coconut, and cook until tender, about 5 minutes.

  2. Transfer the vegetables into a food processor, along with the coconut water, cayenne pepper, curry powder, ginger powder, salt, and pepper, and blend until smooth.

  3. Pour the mixture from the food processor back into the saucepan over low heat. Bring the mixture to a slight simmer. Remove from the heat and serve warm. Garnish with lemon zest, if desired.
