Flat-Belly Diet: Buffalo Chicken Sliders with Blue Cheese Dip
Cook up this flat-belly recipe for Buffalo Chicken Sliders for a light meal or party appetizers. Cooked ground chicken can be dry sometimes, but the onions and spinach in this recipe add moisture.

Blue Cheese Dip (recipe follows)
16 ounces ground chicken breast
1/2 teaspoon Buffalo-wings seasoning mix
1/4 cup minced red onion
1 cup packed spinach, thinly chopped
1 tablespoon Buffalo-wings sauce
8 whole-grain slider buns
8 leaves Bibb lettuce
In a large bowl, mix the chicken and Buffalo-wings seasoning. Gently fold in the onion, spinach, and Buffalo-wings sauce, and mix until incorporated.
Form 8 uniform patties with 3/4-inch thickness, and grill over medium-high heat with lid closed until cooked through, about 4 minutes on each side.
Place each slider on a whole-wheat bun, and top with Blue Cheese Dip and lettuce.
Blue Cheese Dip
1/3 cup nonfat plain Greek yogurt
1/4 cup crumbled blue cheese
1 tablespoon lemon juice
1/2 teaspoon minced garlic
In a medium bowl, mix all ingredients until blended.
