Flat-Belly Diet: Buffalo Chicken Sliders with Blue Cheese Dip

Cook up this flat-belly recipe for Buffalo Chicken Sliders for a light meal or party appetizers. Cooked ground chicken can be dry sometimes, but the onions and spinach in this recipe add moisture.

Yield: 4 servings

Blue Cheese Dip (recipe follows)

16 ounces ground chicken breast

1/2 teaspoon Buffalo-wings seasoning mix

1/4 cup minced red onion

1 cup packed spinach, thinly chopped

1 tablespoon Buffalo-wings sauce

8 whole-grain slider buns

8 leaves Bibb lettuce

  1. In a large bowl, mix the chicken and Buffalo-wings seasoning. Gently fold in the onion, spinach, and Buffalo-wings sauce, and mix until incorporated.

  2. Form 8 uniform patties with 3/4-inch thickness, and grill over medium-high heat with lid closed until cooked through, about 4 minutes on each side.

  3. Place each slider on a whole-wheat bun, and top with Blue Cheese Dip and lettuce.

Blue Cheese Dip

1/3 cup nonfat plain Greek yogurt

1/4 cup crumbled blue cheese

1 tablespoon lemon juice

1/2 teaspoon minced garlic

In a medium bowl, mix all ingredients until blended.

Note: Serve sliders with celery and carrot sticks to get all the traditional flavors of Buffalo chicken wings. Its a great way to get more veggies, too!
