1 teaspoon olive oil
2 cups chopped celery
2 cups chopped onion
2 cups matchstick carrots
4 cloves garlic, chopped
1 teaspoon coriander
1-1/2 teaspoons cumin
1 cup lentils
One 14.5-ounce can no-salt-added diced tomatoes
4 cups reduced-sodium vegetable broth
1/2 cup skim milk
In a large soup pot, heat the olive oil over medium-high heat.
Cook the celery, onion, and carrots until softened, about 8 minutes.
Stir in the garlic and cook an additional 2 minutes, until fragrant.
Add the coriander, cumin, lentils, tomatoes, and vegetable broth.
Bring the soup to a boil; reduce the heat to medium, and cover.
Cook for 30 minutes or until the lentils are tender.
Pour the soup into a blender, or use an immersion blender. Add the milk and blend until smooth and creamy.
