Cinnamon Apple-Butter Parfait - dummies

This recipe for Cinnamon Apple-Butter Parfait is a sweet, flat-belly treat. Blend the apple butter with a bit of yogurt and then layer it with fresh berries. A crunchy topping of crumbled graham crackers adds texture. Don’t have apple butter? Make it a pumpkin parfait by stirring in 1/4 cup pumpkin puree and replacing the cinnamon with pumpkin pie spice. Top with pumpkin seeds for extra crunch.

Don’t worry — there’s no butter in apple butter. Rather, it’s made from cooked apples seasoned with spices; and its texture, as the name implies, is as smooth as butter.

Prep time: 5 minutes

Yield: 2 servings

1 cup nonfat plain Greek yogurt

1/4 cup apple butter

1/4 teaspoon ground cinnamon

1/2 cup strawberries, sliced

1/2 cup blueberries

1 graham cracker square, crumbled

Cinnamon, for garnish

  1. In a small bowl, combine the yogurt, apple butter, and cinnamon.

  2. Using two small dessert cups (preferably clear glass), pour 1/4 cup of the yogurt mixture into each dish.

  3. In a small bowl, combine the strawberries and blueberries. Layer each dish with 1/4 cup of the mixed berries.

  4. Repeat Steps 2 and 3. Top the final layer with graham crackers and dust with a sprinkle of cinnamon.
