One of the greatest pleasures of life is enjoying the foods you love, including yummy muffins. This recipe for Paleo apple cinnamon muffins keeps you on a healthy track by removing the bad stuff and replacing it with nutrient-rich ingredients.

Preparation time: 5 minutes

Cooking time: 20 minutes

Yield: 5 servings

1-1/2 cups blanched almond flour

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

Pinch of salt

1/2 cup unsweetened applesauce

1 teaspoon apple cider vinegar

1 room temperature egg

1 teaspoon vanilla extract

1 to 2 tablespoons raw honey

  1. Preheat the oven to 350 degrees F and line a muffin tin with baking cups. Mix the almond flour, baking soda, cinnamon, and salt in a bowl.

  2. In a separate bowl, whisk the applesauce, vinegar, egg, vanilla, and honey.

  3. Spoon the batter into the prepared muffin tin, filling each cup to the top.

  4. Bake until a toothpick inserted into the center comes out clean, approximately 20 minutes.

  5. Allow the muffins to cool on a wire rack before serving.
