Recipe for Dark Chocolate Orange Bonbons

This recipe for dark chocolate orange bonbons is a delicious chocolate treat for those following a Paleo lifestyle. Made with healthy fats and protein, this recipe tastes amazing and doesn’t require you to own a candy factory.

Raw cacao powder isn’t the same as natural cocoa or Dutch-processed cocoa powder. Raw cacao powder contains the highest amounts of beneficial antioxidants and minerals by far, and it tastes much better and less bitter.

Preparation time: 25 minutes, plus chilling time

Cooking time: 2 hours, 5 minutes

Yield: 15 servings

Chocolate Shell Coating (see recipe below)

One 13.5-ounce can full-fat coconut milk

3 tablespoons raw honey

4 tablespoons raw cacao powder

1/2 teaspoon vanilla extract

Zest of 1 orange

  1. Bring the coconut milk and honey to a boil over medium heat and simmer it over very low heat for about 2 hours, stirring occasionally. After 2 hours, the mixture should’ve thickened to have the consistency of sweetened condensed milk and not run off the spoon easily.

  2. Add the cacao powder and vanilla and cook for about 5 minutes, stirring constantly so the mixture doesn’t burn. When the mixture starts to release off the bottom of the pan and has a very thick consistency, remove it from the stove.

  3. Add the orange zest and let the mixture cool to room temperature. Chill the cooled mixture in the fridge for about 2 hours.

  4. Grease your hands with butter and start rolling the chilled cacao mixture into balls, about 2 teaspoons per ball. Refrigerate the formed truffles while making the Chocolate Shell Coating.

  5. Dip each truffle in the Chocolate Shell Coating and then refrigerate on a sheet lined with parchment paper. Keep refrigerated.

Chocolate Shell Coating

2-1/2 tablespoons cacao butter

3-1/2 tablespoons raw cacao powder

1 tablespoon raw honey

1/4 teaspoon vanilla extract

  1. Melt the cacao butter in a bowl over simmering water (double boiler) until it reaches 122 degrees F.

  2. Add the remaining ingredients and mix until all are combined and the mixture reaches 122 degrees F.
