Who doesn't love chocolate? For a Paleo-approved chocolate treat, try this recipe for 84 percent dark chocolate sweetened with honey. You'll find no artificial sweeteners or chemicals, and best of all, this Paleo recipe is easy to make and doesn't sacrifice taste.

Preparation time: 30 minutes, plus cooling

Cooking time: 5 minutes

Yield: 9 servings

2-1/2 tablespoons cacao butter

3-1/2 tablespoons raw cacao powder

1 tablespoon raw honey

1/4 teaspoon vanilla extract

  1. Melt the cacao butter in a bowl over simmering water (double boiler) until it reaches 122 degrees F.

  2. Add the cacao powder, honey, and vanilla. Mix until the ingredients are combined and the mixture reaches 122 degrees F.

  3. Begin tempering the chocolate by pouring the mixture on a chilled marble slab or glass cutting board.

  4. With a flexible plastic scraper or palette knife, spread the chocolate thinly, scoop it up, and spread it again. Repeat the sequence, keeping the chocolate constantly on the move for about 5 to10 minutes or until the chocolate sets quickly when dropping a little of the onto the side of the slab/board.

    The chocolate setting quickly is a sign it's tempered and ready to pour into molds.

  5. Let the tempered chocolate cool at room ­temperature for a few hours.
