Specialty Pots and Pans

A whole world of specialty pots and pans awaits when you’re ready to move beyond basic pots and pans. Use specialty pots and pans for specific types of cooking or for specific types of food dishes. This list offers some excellent pots and pans that are designed for special jobs:

  • Rondeau: A straight-sided pot with two handles and a lid, a 12-inch rondeau can hold enough food to serve eight people or more.

  • Sauteuse evasée: A sauteuse evasée (saw-TOOZ eh-vah-SAY), also called a slope-sided saucepan, is 8 to 9 inches wide, and holds about 3 quarts.

  • Wok or stir-fry pan: A wok is a large, bowl-shaped pan with a rounded bottom that sits inside a disk that fits over your heat source.

  • Pasta pot: A large, 8-quart stainless steel pot fitted with a lid is the perfect size for cooking 1/2 to 2 pounds of pasta.

  • Pancake griddle: This flat, nonstick griddle makes great pancakes, grilled cheese sandwiches, bacon, and the like.

  • Omelet pan or skillet: A 10-inch omelet pan or skillet with curved sides can make perfect omelets. An omelet pan is also excellent for sautéing potatoes and other vegetables.

  • Gratin pan: Gratin dishes are shallow and measure from 10 inches long and up. Some are attractive enough to go from oven to table.
