Meatless Monday and Sustainability

Meatless Monday is a fairly new concept often mentioned on Facebook and Twitter. All it means is that one day a week you choose to eat vegetarian or vegan.

Not only can Meatless Monday save money (because meats are expensive), but the plan helps the environment (because large beef, pork, and chicken facilities create nitrate pollution and generate almost 20 percent of greenhouse gas emissions that accelerate climate change). Livestock also uses a tremendous amount of precious fresh water: Every pound of beef takes around 2,000 gallons of water to produce.

So, on Mondays, think about eating meatless for breakfast, lunch, and dinner. Enjoy meals made with lots of vegetables, whole grains, beans, and cheese. Your wallet and the planet will thank you!

Even if you’re on a Paleo diet, you can still eat a meatless meal or two. Your body doesn’t need to consume all nine of the essential amino acids every single day to stay healthy. Recipes using eggs and cheese are a good choice. Or you can just eat meals rich in veggies and nuts. Don’t worry — your protein needs are still being met by your diet.
