Feta Cheese and Roasted Pepper Spread
This beautifully reddish orange cheese spread is addictive. It combines two favorite ingredients used in Greek and Arabic cooking: feta cheese and roasted red peppers. The addition of pickled peppers adds a jolt of warmth to this delicious spread. Serve with warm pita bread or thin slices of country whole-wheat bread.
Preparation time: 10 minutes
Yield: About 2 cups
1 pound feta cheese
5 tablespoons extra-virgin olive oil
1 roasted red pepper (from a jar)
2 tablespoons pickled jalapeño slices, drained
2 tablespoons freshly squeezed lemon juice
Black pepper to taste
Crumble the feta cheese into a blender jar or food processor bowl. Add 2 tablespoons of the olive oil. Pulse until creamy.
Add the pepper and jalapeños and pulse until well combined.
Add the remaining 3 tablespoons of olive oil and the lemon juice. Pulse until smooth. Season with the black pepper. Serve with warm pita bread.
