Broccoli with Red Peppers and Onion is an inexpensive dish that's colorful enough for your Thanksgiving or Christmas dinner table. Plain broccoli is nutritious but can be boring. Dress it up with red bell peppers and almonds to give your green some extra zip. It works great with a wide variety of main course dishes.

Broccoli with Red Peppers and Onion

Preparation time: 20 minutes

Cooking time: 25 minutes

Yield: 12 servings

3 bunches fresh broccoli

1 tablespoons butter

2 medium red bell peppers, cut into short, thin strips

1 medium onions, thinly sliced

3/4 teaspoons salt

1/2 teaspoon pepper

1/3 cup sliced almonds, toasted

  1. Wash and dry the broccoli and cut off the stems, using only the florets.

  2. In a stockpot, heat some water until it comes to a boil. Add the broccoli and boil, uncovered, for 7 to 10 minutes, or until bright green and tender.

  3. Drain the broccoli and rinse it under cold water; set it aside.

  4. In an extra-large skillet or wok, melt the butter.

  5. Add the bell peppers and onions and cook them for 5 minutes, stirring occasionally.

  6. Add the broccoli and sprinkle the vegetables with salt and pepper. Cook for an additional 6 to 8 minutes, and then remove them from heat.

  7. Place the vegetable mixture in a serving dish, topping it with the almonds.
