Steak Tenderloin with Crispy Kale

Prep time: 5 minutes

Cook time: 10 minutes

Yield: 4 servings

Ingredients

1 large bunch kale, thick stems removed and leaves torn into bite-size pieces
2 tablespoons olive oil
Salt and pepper, to taste
Four 8-ounce boneless beef tenderloin steaks

Directions

  1. In a large bowl, toss the kale with the olive oil; season with salt and pepper.
  2. Line a rimmed baking sheet with parchment, and spread the kale on it.
  3. Season the steaks with salt and pepper and place them on the baking sheet.
  4. Broil on low for 2 to 3 minutes; then turn the steaks, stir the kale, and broil another 2 to 3 minutes.
  5. Remove the baking sheet from the oven, and let the steaks rest 5 minutes before serving.
  6. Serve the steaks hot with the crispy kale.
