These no-bake chocolate treats are perfect for Christmas gift baskets. Somewhere between a cookie and a truffle, these chocolate bites are a delight of Old World charm, with all the tastes of Black Forest cake.

No-Bake Black Forest Bites

Special equipment: 1-inch scoop, grater

Preparation time: 45 minutes, plus 5 minutes cooling

Cooking time: 5 minutes

Yield: 64

6 ounces good-quality semisweet chocolate, chopped

4 tablespoons butter

9-ounce box chocolate wafers, finely crushed

1 1/2 cups dried cherries, chopped

3/4 cup spreadable cherry or black cherry fruit jam (Smucker’s Simply 100% Fruit)

1/4 teaspoon almond extract

7 ounces good-quality white chocolate, finely grated

  1. Line a tray or jelly roll pan with wax paper.

  2. Melt the semisweet chocolate and butter in a medium-sized saucepan, stirring constantly over low heat. Remove from the heat.

  3. Stir in the chocolate wafers, cherries, cherry fruit spread, and almond extract.

  4. Scoop the mixture and roll into 1-inch balls. (They will look a little greasy.) Roll the balls in the white chocolate. Refrigerate in an airtight container for up to 1 week. Bring to room temperature before serving.
