Recipe for Feta Supreme Spread
Slather this spread on gluten-free pita wedges or gluten-free crackers to make an easy appetizer. You can also use it as a sandwich spread or sprinkled over a Greek salad.
Preparation time: 5 minutes, plus refrigeration time
Yield: 2 cups
8 ounces feta cheese
1-1/2 tablespoons fresh lemon juice (1 lemon)
1 tablespoon red wine vinegar
3 tablespoons olive oil
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
1/8 teaspoon cumin
1/4 teaspoon pepper
With a fork, crumble the feta in a medium bowl.
Add the lemon juice, red wine vinegar, olive oil, oregano, garlic powder, cumin, and pepper and continue to blend with a fork until everything is mixed.
Cover the bowl with plastic wrap and refrigerate the spread for several hours.
