Recipe for Blueberry Vanilla Yogurt Popsicles
For those hot summer days, cool off with this Paleo-friendly recipe for blueberry vanilla yogurt popsicles. Dairy free and simple to make, this frozen treat fits into a Paleo lifestyle and lets you indulge your natural craving for treats.

Yield: 8 servings
One 13.5-ounce can full-fat coconut milk
2 tablespoons arrowroot powder
2 tablespoons raw honey
1-1/2 teaspoons vanilla extract
1/8 teaspoon ground vanilla bean
1-1/2 cups fresh or thawed frozen blueberries
In a medium saucepan, whisk the coconut milk, arrowroot powder, and honey.
Heat the mixture over medium heat until it simmers and thickens, stirring constantly. Let it cool for 5 minutes and then mix in the vanilla extract and ground vanilla.
Divide 1 cup of the mixture evenly into 8 popsicle molds, filling each mold about full. Freeze for about 1 hour.
In a blender, combine the blueberries with the reserved coconut milk mixture and blend until smooth.
Fill the popsicle molds to the top with the blueberry mixture and insert a wooden stick in each.
Freeze for 4 to 6 hours, or until frozen.
To remove the popsicles from the molds, dip the molds in a bowl of warm water for 30 seconds.
If you can’t find ground vanilla bean, you can use another ½ teaspoon of vanilla extract instead.
