How to Make Caraway Pork with Cabbage and Apples

Preparation time: 15 minutes

Cook time: 1 hour

Yield: 4 servings

1 pound ground pork

1 teaspoon salt

1/2 tablespoon caraway seeds

1/2 tablespoon ground paprika

1/2 tablespoon grainy mustard

1/2 tablespoon coconut oil

1 medium onion, diced

1 clove garlic, minced

1 large head green cabbage (about 2 pounds), cored and thinly sliced

2 Granny Smith apples, cored and thinly sliced

1 teaspoon Morning Spice or cinnamon

  1. Preheat the oven to 350 degrees F.

  2. In a large bowl, mix the pork, salt, caraway seeds, paprika, and mustard until combined. Set aside.

  3. In a large skillet, heat the coconut oil over medium-high heat, and then add the onion, stirring until soft, about 5 to 7 minutes. Add the garlic and cook until fragrant, about 30 seconds. Crumble the pork into the pan and cook, breaking up the meat with a wooden spoon until browned, about 5 minutes.

  4. Spread half the cabbage in a large casserole dish that’s at least 4 inches deep. Spread half the apples on top of the cabbage and cover with all the meat. Add the remaining cabbage and top with the rest of the apples. Sprinkle with Morning Spice.

  5. Cover tightly with foil and bake until the cabbage is tender, about 1 hour. Allow to rest 5 minutes before serving.

Morning Spice

Preparation time: 5 minutes

Yield: 1/4 cup

1 tablespoon ground cinnamon

2 teaspoons ground marjoram

1 teaspoon ground nutmeg

1 teaspoon coarse (granulated) garlic powder

1 teaspoon salt

1/2 teaspoon ground black pepper

  1. Measure all the spices into a medium bowl and mix with a fork until combined.

  2. Transfer the spice blend to an airtight container.
