This recipe for chocolate coconut bark is the perfect treat for when you're craving something chocolatey or sweet. Remember, just because you're living Paleo doesn't mean you have to sacrifice sweets.

Preparation time: 10 minutes, plus freezing time

Yield: 12 servings

1 cup coconut oil, melted

2 cups shredded unsweetened coconut

2 teaspoon vanilla extract

1 tablespoon raw honey

1 cup Paleo-friendly chocolate chips or homemade chocolate

  1. In a large bowl, mix the coconut oil, vanilla, and honey, then mix in the shredded coconut.

  2. Press the mixture evenly across the bottom of an 8-x-8-inch pan lined with parchment paper. Freeze until the mixture hardens.

  3. Melt the chocolate chips slowly over low heat in a bowl over simmering water (double boiler) and then spread the melted chocolate evenly over the top of the frozen coconut.

  4. Return the pan to the freezer and, after the chocolate has set, chop the bark into small pieces. Keep frozen.
