How to Grill the Perfect Steak
Steak on the grill may be one of summer’s nicest luxuries, as long as you cook the steak the right way! A dry, tough steak is disappointing, so don’t overcook. Medium or medium rare yields a more tender steak than well-done. You can also add flavor with a good marinade. Check out this recipe for The Perfect Steak.
The Perfect Steak
Preparation time: 5 minutes plus marinating time
Cook time: 8–20 minutes
Yield: 4 servings
2 T-bone, porterhouse, or top loin steaks, about 1 inch thick
1/2 cup dry red wine (try Merlot or Shiraz)
1 tablespoon Worcestershire sauce
1 large clove garlic, minced (about 1 teaspoon)
1 teaspoon ground cumin
1/4 teaspoon black pepper
Oil for the grill rack
1 teaspoon salt
Place the steaks in a large resealable plastic bag. Add the wine, Worcestershire sauce, garlic, cumin, and black pepper to the bag, seal, and marinate in the refrigerator for about 30 minutes, turning once after about 15 minutes.
Oil the grill grid and prepare a medium fire in a charcoal or gas grill.
Remove the steaks from the bag and discard the marinade. Put the steaks on the grill.
Grill for about 8 minutes for rare, 15 minutes for medium, or 20 minutes for well-done, turning the meat once with the tongs halfway through cooking. Season with the salt and serve immediately.
