Sloppy Joes for a Flat-Belly Diet
Sloppy Joes are classic for busy weeknight meals, and they taste great reheated, too. You can use ground turkey breast instead of beef, or make it vegetarian with ground tempeh.
Prep time: 5 minutes
Cook time: 15 minutes
Yield: 6 servings
1 teaspoon canola oil
1 yellow onion, diced
1 celery stalk with leaves, thinly chopped
1/2 cup matchstick carrots, chopped
1 green bell pepper, seeded and diced
1 tablespoon minced garlic
1 pound 96 percent lean ground beef
1 tablespoon Worcestershire sauce
1 tablespoon blackstrap molasses
1/8 teaspoon cayenne pepper
3/4 cup tomato sauce
6 whole-wheat burger buns
6 large Bibb lettuce leaves
In a large sauté pan, heat the oil over medium-high heat. Add the onions, celery, carrots, and bell pepper, and sauté until translucent.
Add the garlic and sauté until fragrant, about 30 seconds.
Remove the veggies from the pan and set aside in a bowl.
In the same pan over medium-high heat, add the ground beef, Worcestershire sauce, molasses, and cayenne pepper and cook until the meat is browned.
Stir in the tomato sauce and cooked vegetables.
Serve on whole-grain buns with lettuce.
