Cacao's health benefits are one of the reasons Paleo advocates love a chocolate treat, like this recipe for raspberry-filled homemade chocolates. Raw cacao beans are high antioxidants; minerals such as calcium, magnesium, potassium, and manganese, and healthy fats. Having sweets while living Paleo is easy with recipes like this that are simple to make and taste amazing.

Raw cacao powder isn't the same as natural cocoa or Dutch-processed cocoa powder. Raw cacao powder contains the highest amounts of beneficial antioxidants and minerals by far, and it tastes much better and less bitter. My favorite raw cacao powder is made by Essential Living Foods.

Preparation time: 10 minutes, plus freezing time

Cooking time: 5 minutes

Yield: 15 servings

2 tablespoons almond butter

3 tablespoons coconut oil, melted

3 tablespoons raw cacao powder

1/2 teaspoon vanilla extract

Pinch of salt

1 tablespoon raw honey

15 frozen or fresh raspberries

  1. Whisk the almond butter, coconut oil, cacao powder, vanilla, and salt in a bowl over simmering water (double boiler) until melted and combined.

  2. Halfway fill 15 cavities of a silicone candy mold with the melted chocolate.

  3. Add 1 raspberry to each cavity and cover with more chocolate.

  4. Freeze until the chocolate is set, about 20 minutes. Store in the freezer or fridge.
