Recipe for Date Bran Muffins
These dense, flavorful muffins make a good breakfast bread or snack. The bran cereal adds a hefty dose of dietary fiber, and the dates add flavor and sweeten the muffins.

Yield: 10 muffins
1 cup plain soymilk
1 tablespoon vinegar
1-1/2 cups bran cereal
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/3 cup packed brown sugar
1/2 ripe banana, mashed
1/4 cup vegetable oil
3/4 cup chopped dates
Preheat the oven to 400 degrees.
Pour the soymilk into a bowl and add the vinegar. Stir; then add the bran cereal. Set this mixture aside for a few minutes to let the bran absorb the milk.
In a large bowl, combine the flour, baking powder, baking soda, and brown sugar.
Add the banana and oil to the soymilk and cereal mixture and stir well to combine. Then add this mixture to the dry ingredients and stir until the ingredients are just moistened.
Stir in the dates. The batter will be stiff.
Oil muffin tins or line them with paper, and divide the batter among 10 muffins.
Bake for 25 minutes or until the muffins are browned and set.
