Try this quick, delicious recipe for cookie dough bites for the Paleo, health-conscious chocolate lover in you. Made with healthy fats and protein, and sweetened only slightly with raw honey, this Paleo recipe helps satisfy your cravings for sweets.

Preparation time: 10 minutes, plus freezing time

Yield: 12 servings

3 tablespoons coconut oil, melted

1-1/2 tablespoons full-fat coconut milk

3/4 teaspoon vanilla extract

2 teaspoons raw honey

3/4 cup blanched almond flour

3 tablespoons Paleo-friendly chocolate chips, plus more for garnish (about 3 to 4 tablespoons)

  1. Whisk together the coconut oil, coconut milk, vanilla, and honey.

  2. Using a rubber spatula, gently mix in the almond flour until the ingredients are combined. Be careful not to overmix, or the batter will become oily.

  3. Fold in 3 tablespoons of the chocolate chips and freeze the dough for about 20 minutes.

  4. Roll chilled dough into 12 balls (2 teaspoons per ball) and place on a cookie sheet lined with parchment paper.

  5. Melt the remaining chocolate chips in a bowl over simmering water (double boiler).

  6. Drizzle the melted chocolate over each cookie dough bite. Store any leftover bites in the refrigerator.
