Paleo-Friendly Snack: Nutty Fruit Stackers Recipe

This Paleo snack is also a sweet treat, so be sure to serve it with some protein to balance the sugars. A piece of grilled chicken breast or a hard-boiled egg is a good accompaniment.

Preparation time: 2 minutes

Yield: 2 servings

1 raw apple

2 tablespoons almond butter

1/4 teaspoon pure vanilla extract

1/4 teaspoon ground cinnamon

Dash of salt

1 tablespoon raisins

  1. With a sharp knife, cut the apple into six equal slices.

  2. In a small bowl, mix almond butter, vanilla, cinnamon, and salt with a fork until combined.

  3. Spread each slice of apple with 1 teaspoon of almond butter. Pile slices to form stacks of three slices each. Sprinkle the top of each stack with 1/2 tablespoon raisins.

  4. Chill in the refrigerator for 5 minutes before eating.

This recipe also works great with pears! Or change the flavor by swapping out the almond butter with another Paleo-friendly option, such as sunflower seed butter with a few sunflower seeds sprinkled on with the raisins. You may also like cashew or pecan butter. Or try coconut butter and add a sprinkle of shredded, unsweetened coconut to the top.
