Poblanos are a type of mild Spanish pepper.

Preparation time: 15 minutes

Cooking time: 35 minutes

Yield: 6 servings

36 chicken wings

1 teaspoon cumin

2 teaspoons garlic powder

3 tablespoons chili powder, divided

1 tablespoon kosher salt, divided

2 teaspoons ground black pepper, divided

1 pineapple, diced into 1-inch cubes

3 poblano peppers, diced into 1-inch cubes

2 onions, sliced

2 tablespoons olive oil

1/2 teaspoon cinnamon

  1. In a large bowl, combine the chicken wings, cumin, garlic powder, and half each of the chili powder, salt, and pepper. Add the olive oil, mix well, and marinate for 15 minutes to 24 hours.

  2. Preheat the oven to 400 degrees.

  3. Line two rimmed baking pans with parchment paper and spread the wings evenly throughout. Disperse the pineapple, poblanos, and onions among the wings.

  4. Bake for 20 minutes. Turn the wings and mix the pineapple and veggies. Sprinkle on the remaining chili powder, cinnamon, salt, and pepper.

  5. Bake for an additional 15 minutes. Remove from the oven and toss before serving.
