Low-Glycemic Baked Chicken with Herbes de Provence

If you’re looking for a new (and low-glycemic!) ways to bake chicken, try this herbes de Provence recipe. Herbes de Provence is a wonderful mix of herbs that typically contains savory, fennel, basil, and thyme, with thyme being the dominant flavor. In the United States, you may even find a little lavender added to the mix.

Low-Glycemic Baked Chicken with Herbes de Provence

Preparation time: 5 minutes

Cooking time: 35–45 minutes

Yield: 4 servings

Nonstick cooking spray

8 bone-in chicken thighs, skin removed

2 1/2 tablespoons herbes de Provence

2 tablespoons extra-virgin olive oil

1 lemon, sliced

  1. Preheat the oven to 350 degrees F. Spray a 9-x-13-inch glass baking dish with nonstick cooking spray.

  2. Rinse the chicken thighs under cold water and place them ino the bottom of the baking dish. Sprinkle the chicken with the herbes de Provence and drizzle the olive oil on top.

  3. Arrange the lemon slices over the chicken thighs and bake in the oven until the chicken is lightly browned and cooked through, about 35 to 45 minutes. Serve warm.
