Lemon Granité

Granité is a French word for a type of flavored ice. Essentially, granités are flavored and sweetened water that you freeze and then scrape. You can use all kinds of fruits to flavor them, and they make a light and refreshing dessert. Granités have a grainy texture in comparison to the smooth and creamy one of sorbet.

Preparation time: 10 minutes, plus a freezing time of 90 minutes

Yield: 6 servings

2 lemons

1 cup water

6 tablespoons sugar

  1. Juice the lemons.

  2. In a saucepan, combine 3/4 cup lemon juice, water, and sugar.

  3. Stir well.

  4. Bring to a boil and remove from the heat.

  5. Pour the mixture into a shallow, freezer-proof pan.

  6. Place in the freezer.

  7. After about 30 minutes, remove the trays from the freezer and, using a fork, scrape back and forth over the ice, eventually reaching the bottom of the container.

  8. Return the mixture to the freezer.

  9. Repeat Steps 7 and 8 after 20 minutes, then after another 15 minutes, and a final time after another 15 minutes.

    After you’re finished, you shouldn’t see any big chunks of ice.

  10. Serve in chilled bowls.

You can present the granités with fresh fruits around them, or serve them with cookies and garnish with an edible flower such as a pansy or violet (but be careful to use only organically grown flowers you know haven’t been sprayed with chemicals).
