How to Roast Meat

Step 2 of 5

Place the meat — fat side up — in a large, shallow roasting pan and brush it with olive oil.

You can also add seasonings and herbs at this point, if you want. Use an oven proof skillet if you don’t have a roasting pan. Don't cover the pan.

    great article, I always have a problem working out the correct timings though as the meat is never exactly on the guideline weights. anyway i found this online calculator that works a treat in our oven http://www.roastmeatcalculator.com
