No-Bake Black Forest Bites
Special equipment: 1-inch scoop, grater
Preparation time: 45 minutes, plus 5 minutes cooling
Cooking time: 5 minutes
6 ounces good-quality semisweet chocolate, chopped
4 tablespoons butter
9-ounce box chocolate wafers, finely crushed
1 1/2 cups dried cherries, chopped
3/4 cup spreadable cherry or black cherry fruit jam (Smucker’s Simply 100% Fruit)
1/4 teaspoon almond extract
7 ounces good-quality white chocolate, finely grated
Line a tray or jelly roll pan with wax paper.
Melt the semisweet chocolate and butter in a medium-sized saucepan, stirring constantly over low heat. Remove from the heat.
Stir in the chocolate wafers, cherries, cherry fruit spread, and almond extract.
Scoop the mixture and roll into 1-inch balls. (They will look a little greasy.) Roll the balls in the white chocolate. Refrigerate in an airtight container for up to 1 week. Bring to room temperature before serving.
