How to Make a Basic Cookie Mix

Friends and family will love this convenient cookie mix as a Christmas gift. This mix makes it so easy to have warm, tasty cookies quickly when the kids come home from school, when neighbors drop in, or when you have a cookie craving.
Basic Cookie Mix
Preparation time: 30 minutes plus packaging
Yield: 4 packets, about 3 2/3 cups each
2-1/2 cups granulated sugar
1/2 vanilla bean
2 cups packed light brown sugar, free of lumps
7 cups flour
3 teaspoons baking soda
2-1/2 teaspoons salt
20-ounce package butter-flavored vegetable shortening (3 cups)
Place the sugar in a very large bowl. Split the vanilla bean lengthwise and scrape out the seeds. Add to the sugar and work into the sugar to distribute evenly. Fingers are great for this task. Add the brown sugar and combine thoroughly.
Add the flour, baking soda, and salt and combine thoroughly. A wire whisk is great for this task, but no matter what tool you use, make sure that the ingredients are evenly distributed.
Add the shortening and beat on low until very evenly incorporated, about 3 to 4 minutes. The mixture will be crumbly, but all the bits of mixture should be the same size.
Divide the mixture evenly into packages. Copy the preparation label, below, and attach to the package or gift container.
The success of the mix depends on the even distribution of the ingredients. Each package has to have the same quantity of each ingredient in it for the cookies to cook properly, so don’t rush the combining steps.
Preparation time: 15 minutes
Cooking time: 10 to 11 minutes
Yield: About twenty-eight 2 1/2-inch cookies
1 packet Basic Cookie Mix
1 large egg
5 tablespoons water
Sugar or colored sugar (optional)
Preheat the oven to 375 degrees F.
Combine the mix, egg, and water in a medium bowl. Beat on medium with an electric mixer until thoroughly combined.
Drop by tablespoonfuls on ungreased baking sheets. Sprinkle with sugar, if desired. Bake for 10 to 11 minutes, until the edges are golden. Cool on a wire rack. Store in an airtight container.
Add 1 cup chocolate chips and 1 cup chopped nuts. Drop by tablespoonfuls on ungreased baking sheets. Bake for 11 to 12 minutes. This variation makes about 3 dozen 2-1/2-inch cookies.
