How to Bake with Gluten-Free Mixes

Gluten-free baking has come a long way. Your results can be far tastier and less gritty and crumbly than in the past. Mixes differ from gluten-free flour blends in that they have many of the ingredients you need already mixed in.

In fact, foods made with gluten-free baking mixes are often better than what you can make from scratch. Better yet, using a commercial mix is quicker, saving you the time and effort of experimenting with different flours to get a tasty finished product.

Here are some mixes to try:

  • All-purpose gluten-free baking mix: Use this mix as a coating for fried and baked meats and vegetables as well as for gravies and in basic cake and cookie recipes. Different brands use different mixes of flours, so test out a few options to find a brand you like.

  • Biscuit and bread mix: These mixes also work for coating meats and veggies, but (as their name implies) they’re especially great for making biscuits and breads.

  • Brownie mix: You can make gluten-free brownies that are every bit as good as their gluten-containing counterparts, especially with the help of this kind of mix.

  • Cake mix: Store-bought gluten-free cake mixes are usually awesome, and they (ahem) take the cake for making it quick and easy to celebrate a birthday or other festivity.

    Keep in mind that cupcakes tend to come out a bit lighter and less crumbly than full-sized cakes when baking gluten-free. Cupcakes are easier to store, too! Just seal the extras in plastic wrap and toss them in the freezer to really make them last.

  • Cookie dough and mix: Gluten-free cookie dough (frozen or refrigerated) and cookie mixes can help you get a batch of freshly baked cookies in no time.

  • Muffin mixes: Gluten-free muffin mixes come in a wide variety of flavors — blueberry, apple, pumpkin spice, and more — so you can use them to get your fix for pretty much any kind of muffin you want. Muffin mix is also great for quick breads.

  • Pancake and waffle mix: Every gluten-free pancake mix I’ve tried is great. There are even some dairy-free ones on the market. These mixes also usually include a few other recipes on the package, including directions for muffins and biscuits.
