Gluten-Free Recipes: Jazz Up Gluten-Free Mixes

In the olden days of gluten-free baking, which were as recent as 5 to 7 years ago, most gluten-free baking mixes tasted horrible and were difficult to find. Today, many delicious mixes are available, and they’re easy to find in most cities and abundant online.

Cinnamon Crumb Cake

Prep time: 5 minutes

Cook time: 30 minutes

Yield: 16 servings

15- to 21-ounce box gluten-free yellow cake mix

3 eggs

1/2 cup (8 tablespoons) unsalted butter, softened

2/3 cup milk

1 teaspoon pure vanilla extract

1-1/2 tablespoons ground cinnamon

1/2 cup brown sugar

2 tablespoons honey

1 cup chopped pecans

  1. Preheat the oven to 350 degrees. Spray a 9-x-13-inch glass baking dish with nonstick cooking spray.

  2. In a medium bowl, combine the cake mix, eggs, butter, milk, and vanilla. Mix with an electric mixer for 1 to 2 minutes on high speed. Pour the mixture into the prepared baking dish.

  3. Sprinkle cinnamon over the entire cake and then sprinkle on the brown sugar. Drizzle honey on top.

  4. Using a butter knife, cut through the topping and swirl it down into the cake. Cover the cake with pecans.

  5. Bake the cake for the amount of time listed on your cake mix box (usually 25 to 35 minutes), or until a toothpick inserted in the center of the cake comes out clean.

Rockin’ Rocky Road Brownies

15-ounce box gluten-free brownie mix (plus the ingredients to prepare it)

1-1/4 cups chocolate chips

1-1/4 cups mini marshmallows

3/4 cup chopped pecans

  1. Preheat the oven to the temperature indicated on your brownie mix. Spray an 8-inch square baking dish with nonstick cooking spray.

  2. In a medium bowl, combine the brownie mix and the ingredients called for on the package. Stir in 1/4 cup chocolate chips.

  3. Pour the batter into the prepared baking dish. Top with marshmallows, nuts, and the remaining 1 cup chocolate chips.

  4. Bake as directed on the brownie package, until a toothpick inserted in the center of the brownies comes out mostly clean.

  5. Cool the brownies for about 10 minutes before cutting them.

All-Nighter Red Bull Cupcakes

Prep time: 5 minutes

Cook time: 15 minutes

Yield: 12 servings

15- to 20-ounce box gluten-free yellow cake mix

12 ounces sugar-free Red Bull

Frosting of your choice

  1. Preheat the oven to 350 degrees. Line a muffin pan with 12 paper liners.

  2. In a large bowl, mix the cake mix and Red Bull with an electric hand mixer on medium speed until the ingredients are combined.

  3. Pour the batter into the muffin pan. Bake according to directions on the box, about 15 minutes.

  4. Let the cupcakes cool. Frost them with a frosting of choice.

Try this recipe with Coke Zero and chocolate cake mix. It also works with vanilla cake mix and Sprite Zero, 1/2 cup cranberries, and 1/4 cup sliced almonds. Stir in any mix-ins you like just before pouring the batter into the muffin cups. Then bake.
