Garlicky Squid Sauté
If you’re a fried calamari fan, you’ll probably love this squid sauté. The mild meaty flavor of the squid really comes through in this sauté recipe because it doesn’t include any breading.
Preparation time: 15 minutes
Cooking time: 10 minutes

15 cloves garlic
1/2 cup olive oil
1 teaspoon salt
1/2 teaspoon pepper
2 large tomatoes
1 large bunch oregano leaves

Chop the oregano.
Heat a dry medium skillet over high heat.
Add a generous tablespoon of the remaining 1/4 cup olive oil and heat until almost smoking.
Pour in 1/3 of the squid with its marinade and sauté for about 30 seconds.
Stir in 1/3 each of the tomatoes and oregano.
