Chocolate Bourbon Pecan Pie Recipe
Rich and chocolatey — this pie is the ultimate holiday dessert. Serve it with a scoop of vanilla low-fat ice cream or nondairy frozen dessert to reduce the damage; this one is high in fat.
Preparation time: 20 minutes
Cook time: 50 minutes
Yield: One 9-inch pie (6 slices)
6 egg whites (or vegetarian egg replacer equal to 3 eggs)
1 cup sugar
1/4 teaspoon salt
1/4 cup melted butter
1 cup light corn syrup
1 cup pecan halves
3 tablespoons bourbon
5 ounces (about 3/4 cup) chocolate chips
1 unbaked 9-inch pie shell
Preheat the oven to 375 degrees F.
In a medium mixing bowl, combine the egg whites or egg replacer, sugar, salt, butter, and corn syrup. Beat until smooth and creamy.
Stir in the pecan halves, bourbon, and chocolate chips.
Pour the mixture into the pie shell. Bake for 50 minutes or until a toothpick inserted into the center comes out clean. Serve warm or chilled.
Substitute 1 teaspoon vanilla for the bourbon. Add a handful of coconut flakes.
