Deviled ham doesn’t have to come from that little paper-wrapped can. Try this tasty retro variety of deviled ham sandwiches, and you’ll be hooked. You can add sprouts, watercress, sliced pepperoncini, or sliced cherry tomatoes to this easy-to-eat, tasty ham sandwich.

Preparation time: 20 to 25 minutes

Yield: 4 servings

6 ounces lean ham

1/2 small onion

Fresh horseradish

2 tablespoons sweet pickle relish

1 tablespoon mustard

1/4 cup fat-free or lowfat mayonnaise

1/4 teaspoon vinegar

8 slices low-calorie white bread

8 to 12 lettuce leaves

Freshly ground black pepper

  1. Remove all visible fat from the ham.

  2. Peel and finely chop the 1/2 onion.

  3. Grate the horseradish.

  4. Drain the pickle relish.

  5. Place the ham, mustard, 2 tablespoons mayonnaise, and the vinegar in a blender or food processor.

  6. Puree or process.

  7. Add the onion, 1 teaspoon horseradish, and the pickle relish.

  8. Stir with a spoon.

  9. Spread the remaining 2 tablespoons mayonnaise on 4 slices of bread.

  10. Evenly divide the deviled ham on the other 4 slices of bread and spread.

  11. Place 2 or 3 lettuce leaves on each ham-filled side.

  12. Sprinkle with several shakes of pepper.

  13. Place the bread slices with mayonnaise on top of the lettuce, slice, and serve.
