Here’s an easy recipe for apple cake that’s scrumptious enough to serve company. The cake is moist and slightly sweet; and it's large, so consider freezing half for later. This apple cake is especially nice when served with coffee or tea.

Ingredients & Directions:
5 large Granny Smith apples, peeled and sliced
2 1/3 cups sugar
2 teaspoons cinnamon
1 cup vegetable oil
3 teaspoons pure vanilla extract
1/4 cup orange juice
4 egg whites
1/2 cup tofu (silken or soft)
3 cups all-purpose flour
3 teaspoons baking powder
Preheat the oven to 350 degrees.
In a medium bowl, combine the apples, 1/3 cup of the sugar, and the cinnamon. Toss until the apple slices are well coated with sugar and cinnamon.
In a larger bowl, combine the oil, vanilla, orange juice, egg whites, and tofu. Blend until the tofu is well incorporated into the mixture and the mixture is smooth. Add the flour, the remaining sugar, and the baking powder. Mix until all the ingredients are well blended.
Oil a tube pan or Bundt pan, and then pour one-third of the batter into the pan. Then add half the apples, another third of the batter, the rest of the apples, and the rest of the batter.
Bake for 1 hour and 10 minutes, or until a toothpick inserted into the center of the cake comes out clean. The cake will be well browned.
